Vegan pasta fagioli is a healthy, comforting meal made in just one pot! This hearty vegetarian soup recipe is so easy to make and packed full of flavor! Ready in under 30 minutes with easy to find ingredients, this is the perfect weeknight meal!

Ingredients

1 onion 2 carrots 3 celery stalks 4 cups vegetable broth 28 oz. crushed tomatoes 1.5 tbsp. balsamic vinegar 2 tbsp. italian seasoning 2 tsp. salt 1 bay leaf 2 cans white beans 4 oz. pasta 1-2 cups frozen spinach

Chop veggies and add them to a large pot. Cook over medium heat for 5-6 minutes.

Once veggies are soft, add 3 cups vegetable broth, tomatoes, spices, balsamic and stir well. Bring pot to a boil.

Rinse and drain white beans. Combine 1/2 the white beans with 1 cup vegetable broth with immersion blender until smooth.

Once soup is boiling, add pasta, the rest of the white beans and the blended white beans. Cook for 1 minute less than pasta box indicates.

Turn heat off. Add frozen spinach to the soup and stir well.

Serve with a slice of crusty bread, salad or crackers for a quick and easy meal.
