Jasmine rice (white or brownBlack beansDiced fire roasted tomatoesWaterChili powderGround cuminSaltGarlic powderFrozen bell peppers

Step 1

Rinse and drain the rice. Add it to the instant pot.

Add the rinsed/drained black beans, water, chili powder, cumin, salt and garlic powder. Stir well.

Drain the liquid from the canned tomatoes. Add the tomatoes on top, do not stir.

Turn on instant pot for 7 minutes high pressure for brown jasmine rice, 3 minutes for white jasmine rice. Allow pressure to release naturally at least 10 minutes.

Once pressure is released, add frozen bell peppers, stir well let sit 3-5 minutes to heat peppers. Serve hot.
