INGREDIENTS

– Onion – Garlic – White beans – Olive oil – Dairy free milk – Vegetable broth – Salt, garlic powder, italian seasoning – Pasta – Broccoli

Step 1

Cook chopped onions in preheated skillet 3-5 minutes, add garlic and cook 1 more minute.

Bring pasta water up to a boil and add pasta. Cook 2 minutes less than instructions indicate.

Chop broccoli into small, bite size pieces.

Before adding broccoli, remove about 1/2 cup of the cooking liquid from the pasta water.

When there are 2 minutes left on the timer for the pasta, add the broccoli to the pot.

Make the sauce, add the white beans, olive oil, vegetable broth, dairy free milk, onions, garlic and pasta water to a high speed blender.

Blend the sauce until smooth (if you have a bullet blender, you will need to do this in batches).

Drain the pasta, add the white bean sauce and stir well. Serve hot.
