The Easiest Vegan Rice Soup


Vegan rice soup is the ultimate comfort food. This is the vegan version of chicken rice soup and it's so easy to make! You can also make it in the instant pot!

– Carrots – Celery – Onion – Spices: salt, garlic powder, dried thyme, parsley, sage, bay leaves – Coconut aminos (or soy sauce) – Vegetable broth – Water – Basmati rice – White beans

Step 1

Chop the vegetables. Use a knife or the food processor.


Step 2

Sauté the veggies over medium heat for 3-4 minutes.


Step 3

Add spices and coconut aminos and cook 3-4 more minutes.


Step 4

Add about 1/2 cup of broth to the pot and scrape the bottom.


Step 5

Rinse the rice. Add the rest of the broth, water, and rice to the pot. Turn heat to high and bring to boil.


Step 6

Once boiling, bring down to simmer. Simmer 20 minutes then add white beans. Cook 10 more minutes.


– Add in more veggies (frozen peas, green beans, frozen cauliflower rice, zucchini, spinach, kale) – Add spice with red pepper flakes or sriracha
