– Onion – Fresh garlic – Curry powder – Turmeric – Cumin – garlic powder – Salt – Red lentils – Water – Cauliflower rice – Crushed tomatoes – Cashews

Step 1

Preheat a large pot over medium heat. When hot, add the onions and ginger and cook for 3-4 minutes.


Step 2

Add the spices to the pot and stir well. Cook 1 minute.


Step 3

Rinse the lentils. Add the lentils, water, cauliflower rice and tomatoes to the pot. Stir well. Cook covered 12-15 minutes on medium high heat.


Step 4

While the lentils are cooking, soak the cashews in boiling water at least 5 minutes.


Step 5

Drain the cashews. Add the drained cashews and fresh water to a high speed blender and blend until smooth.


Step 6

When the lentils are soft, turn off the heat and add the cashew cream. Stir well and serve.
