INGREDIENTS

– Gluten free pasta – Cooked lentils – Onion – Garlic – Tomato paste – Balsamic vinegar – Tomato puree (or crushed tomatoes) – Salt – Italian seasoning – Garlic powder – Cashews + water

Step 1

Bring water to boil, cook pasta. Preheat a skillet over medium heat. Cook onions 4-5 minutes, then add garlic and cook 1 more minute.

Add spices and tomato paste to onion/garlic mixture. Stir well.

Add pureed tomatoes and balsamic vinegar to the onion mixture. Stir well.

Add cooked lentils to marinara sauce. Stir well

Soak cashews in boiling hot water, 5 minutes, then drain. Add cashews, fresh water, salt and garlic powder to blender. Blend 1 minute.

Spoon lentil marinara on bottom of the baking dish.

Add the pasta and the rest of the sauce, stir to incorporate.

Add cashew cream to top of the ziti. Bake in 425F oven for 10 minutes.

To brown the top, broil for 3 -3:30 minutes.
