The Easiest Tuscan Chicken and Rice

– Boneless, skinless chicken – Olive oil – Onions – Garlic – Sundried tomatoes – Kale – Vegetable broth – Cooked rice – Italian seasoning – Garlic powder – Salt

Step 1

Cut the chicken up into 1 inch cubes. Pour olive oil over chicken and add the spices. Stir well.


Step 2

Preheat a large skillet over medium-to-medium high heat. Add chicken and cook 5 minutes, don't touch the chicken.


Step 3

After 5 minutes, stir the chicken and cook 3-5 more minutes until fully cooked. Remove chicken to a clean bowl.


Step 4

Turn down heat to medium and add chopped onions. Cook 3-4 minutes then add garlic, cook 1 minute.


Step 5

Add chopped kale, vegetable broth, salt, garlic powder and italian seasonings to the skillet. Cook 2-3 minutes.


Step 6

Add cooked chicken, rice, sundried tomatoes to kale and onion mixture. Stir well and turn off heat. Add lid and let steam 2-3 minutes.
