– Sweet potatoes – Red bell peppers – Onion – Vegetable broth – Ground Cumin – Smoked paprika – Salt – Lime Juice

Step 1

Chop the sweet potatoes, onions and slice the bell peppers into 1 inch strips.


Step 2

Place parchment on a baking sheet and add the veggies. Roast 400F for 30 minutes.


Step 3

After baking, add the veggies to a pot with the vegetable broth, salt, cumin and smoked paprika. Blend with immersion blender.


Step 4

Blend until smooth (you can also use a blender for this). Add lime juice and taste for seasoning. Reheat on the stove if needed.
