INGREDIENTS

– Sweet potatoes – Cauliflower – Olive oil – Salt – Garlic powder – Ground cumin – Quinoa – Water – Red onion – Kale

Step 1

Preheat the oven to 425F. Cut the sweet potatoes into 1/2 - 1 inch cubes. Add to parchment paper lined baking sheet.

Cut cauliflower florets into bite size pieces. Add to bowl with olive oil, salt, garlic powder and ground cumin. Stir and add to baking sheet with sweet potatoes.

Bake sweet potatoes and cauliflower in 425F oven for 40 minutes. At 30 minute mark, take out and stir.

While sweet potatoes and cauliflower cook, make quinoa (use instant pot or stove top).

Chop red onion and add to a hot skillet sprayed with olive oil. Cook 3-4 minutes.

Add destemmed kale and pinch of salt (cut kale into bite size pieces) to red onions in the skillet. Stir well and cook 1-2 minutes.

Assemble the sweet potato quinoa bowls and add your favorite dressing. Enjoy hot or warm.
