INGREDIENTS

– Sweet potatoes – Olive oil – Spices: Chili powder, cumin, garlic powder, salt – Black beans – Tomato paste – Water – Chili powder, garlic powder, salt – Tomatoes – Cilantro – Avocado – Pickled onions (optional)

Step 1

Cut the sweet potatoes into cubes.  Add sweet potatoes to bowl with olive oil and spices and stir well.

Place sweet potatoes in air fryer and roast at 390F for 14-16 minutes. Shake basket regularly.

While sweet potatoes are roasting, add black beans, tomato paste, water and spices in skillet.

Cook the black beans over medium heat until the sauce thickens and beans are warmed through.
