The Best Spinach Chickpea Salad

Turmeric Dressing – Almond butter – Lemon juice – Maple syrup – Fresh ginger – Turmeric, salt, garlic powder Salad ingredients – Red onion – Chickpeas – Salt, cumin, garlic powder, turmeric, cinnamon – Pistachios – Baby spinach – Cucumber, tomato – Dried apricots

Step 1

Preheat the skillet, chop the red onion. When skillet is hot, spray with oil and add the onions, cook 2-3 minutes.


Step 2

Once onions are soft, add chickpeas, pistachios and spices. Stir well and cook 1-2 minutes. 


Step 3

Let this mixture cool slightly as you assemble the rest of the salad. 


Step 4

Add the dressing ingredients to a blender or bowl. Blend well until fully combined. 


Step 5

Slice the cucumber and tomatoes, chop the dried apricots. 


Step 6

Assemble the salad. Add the baby spinach, veggies, apricots to a bowl. Top with the chickpea mixture and drizzle with turmeric dressing.
