– Olive oil – Red onion – Garlic – Tomato paste – Vegetable broth – Split red lentils – Italian seasoning – Garlic powder – Salt – Roasted red peppers

Step 1

Preheat a large pot over medium heat. Once preheated, add chopped red onion. Cook 3-4 minutes then add the sliced garlic and cook 1-2 minutes.


Step 2

Add tomato paste to the onions and garlic. Stir well then cook 1-2 minutes.


Step 3

Add 1/2 cup of vegetable broth and scrape the bottom of the pot.


Step 4

Rinse the red lentils then add the vegetable broth, roasted red peppers and spices. Cook over medium heat, covered for 15 minutes.


Step 5

Once the lentils are soup, blend with an immersion blender until smooth.
