INGREDIENTS

Red onionsRed wine vinegarWaterSaltBlack peppercorns (optional)Mustard seeds (optional)

Step 1

Thinly slice the onions. I cut the onions in half, then cut them into 1/2 moons.

Combine the red wine vinegar, water and salt in a pan. Bring it up to a boil.

Stuff the onions into a glass jar. Add the optional black peppercorn and mustard seeds on top.

Pour the pickling liquid over the onions. Let sit on counter until the glass is no longer hot, then transfer to fridge.
