The Best Moroccan Lentil Soup

– Olive oil – Red onion – Carrots – Garlic – Spices: Turmeric, Salt, garlic powder, cinnamon, cumin – Vegetable broth – Diced tomatoes – Red lentils

Step 1

Preheat a large pot over medium heat.  Add sliced carrots and chopped red onions and cook 5-7 minutes.


Step 2

Add chopped garlic and spices and cook 1 minute, stirring often.


Step 3

Add 1/2 cup of vegetable broth to the pot and scrape the bottom of the pot.


Step 4

Add the rest of the vegetable broth, diced tomatoes and lentils to the pot. Bring to a boil then turn down to low and simmer 12 minutes.


Step 5

Blend 1/2 to 3/4 of the soup with an immersion blender or blender.
