– Black beans – Cucumber – Tomatoes – Red onion – Flat leaf parsley – Capers Lemon Vinaigrette  – Lemon juice – Red wine vinegar – Olive oil – Dijon mustard – Spices: Salt, garlic powder, oregano

Step 1

Add the lemon vinaigrette ingredients into a large bowl. Stir well to combine.


Step 2

Cut the cucumber into 1/2 inch pieces. Cut the cucumber length wise, then again lengthwise then into 1/2 pieces.


Step 3

Slice the tomatoes, chop the red onion and chop the parsley.


Step 4

Add the cucumbers, tomatoes, red onion, parsley and capers  to the bowl with the dressing.


Step 5

Add drained black beans to the bowl with the veggies.


Step 6

Stir the salad well and serve immediately or allow it to sit in the fridge up to 24 hours.
