The Best Lentil Tortilla Soup


Lentil tortilla soup is the perfect weeknight meal! It's easy to make, super filling and packed with flavor! This healthy twist on a Mexican classic is made in one pot and the ultimate meatless meal.

– Onion – Bell peppers – Spices – Vegetable broth – Green Chiles (canned) – Fire roasted tomatoes – Red split lentils – Black beans – Lime juice – Cilantro – Tortilla chips

Step 1

Preheat a large pot over medium heat. Once preheated, add chopped onion. Cook 3-5 minutes.


Step 2

Add chopped bell pepper to the onions and cook 2 minutes.


Step 3

Add the spices and stir well. Cook 1 minute to toast spices.


Step 4

Add about 1/2 cup of vegetable broth and scrape the bottom of the pot to get off any stuck spices or brown bits.


Step 5

Add the rest of the ingredients except lime juice, cilantro and tortilla chips. Cook over medium heat, covered for 20 minutes.


Step 6

After lentils are fully cooked, add lime juice and blend 1/2 the soup to thicken.


Step 7

Add cilantro and tortilla chips (to pot or individual bowls).
