Kale Salad – Kale – Brussel Sprouts – Pecans – Cranberries Lemon Dressing – Lemon juice – White wine vinegar – Olive oil – Dijon mustard – Salt – Garlic powder

Step 1

Preheat oven to 275F. De-stem the kale and chop or shred it into bite size pieces and wash the kale


Step 2

Shred the brussel sprouts (use a knife or food processor). Add brussel sprouts to the salad bowl with the kale.


Step 3

Once oven is preheated, add the pecans to the oven and bake for 7 minutes


Step 4

Add all the ingredients for the lemon dressing in a jar and add a lid. Shake well until combined (or add to a bowl and whisk).


Step 5

Finely chop the pecans. Add pecans and dried cranberries to the bowl with kale and brussel sprouts.


Step 6

Pour the lemon dressing over the salad and mix well with tongs. Store in fridge at least 3 hours before serving.
