INGREDIENTS

– Onion – Garlic – Carrots – Celery – Diced tomatoes – Vegetable broth – Diced tomatoes – Balsamic vinegar – White beans – Spinach – Salt, garlic powder, italian seasoning

Step 1

Sauté the onions, garlic, veggies in the instant pot 4-5 minutes.

Turn off the sauté function. Add the tomato paste, italian seasoning, salt and garlic powder.

Scrape the bottom of the instant pot with 1/2 cup of broth. Then add the rest of the vegetable broth and balsamic vinegar.

Add white beans and diced tomatoes to the instant pot.

Set instant pot to high pressure for 10 minutes. After 10 minutes, release pressure and blend half the soup.
