INGREDIENTS

– Pumpkin puree – Oat flour – Olive oil – Salt – Ground sage (optional) – Ground nutmeg (optional) – Fresh sage (optional)

Add pumpkin puree, oat flour, olive oil and spices to a large bowl.

Stir well until flour has been combined. Add more oat flour 1 tablespoon at a time until dough is no longer sticky.

Take a small handful of dough and roll in your hand. It should not stick to your hands.

Roll the dough into a long log, about 1/2 inch in diameter..

Cut the dough into 1 inch pieces.

Drop gnocchi using slotted spoon into boiling water. Once they start floating, cook 3 more minutes.

– Heat large skillet over medium heat. – When skillet is hot, add olive oil and cooked gnocchi. – Cook gnocchi 3 minute before stirring. Sprinkle with salt and fresh sage. – Once flipped, cook 3 minutes the other side.
