The Best  Dairy Free Mashed Potatoes


Dairy free mashed potatoes are rich, creamy and so easy to make. These creamy vegan mashed potatoes are made with cashews instead of cream or milk.

– Potatoes – Cashews – Vegetable Broth – Olive oil – Salt

Step 1

Wash the potatoes. Chop them into equal size pieces (the smaller, the faster they will cook).


Step 2

Add potatoes to large pot. Add water until potatoes are fully covered.


Step 3

Cook potatoes over high heat, covered until boiling. Once boiling, remove the lid and cook 10-15 minutes until fork tender.


Step 4

While potatoes are cooking, soak the cashews in boiling hot water for at least 5 minutes.


Step 5

Drain the water from the cashews (discard it). Add the 1/2 cup of vegetable broth and the cashews to a high speed blender. Blend until smooth.


Step 6

Drain off the water from the potatoes. Add the cashew sauce, the rest of the vegetable broth, olive oil and salt.


Step 7

Mash the potatoes with a potato masher until lump free. You can also use an immersion blender at the end to make them super smooth.
