Vegan Broccoli Cheese Soup is the ultimate comfort food, perfect for weeknight dinners or satisfying lunches! You will not believe how rich and creamy this dairy free broccoli cheese soup gets without heavy cream or cheese!


- 1 medium head cauliflower - 4 cups vegetable broth - 1 medium head broccoli - 2 medium carrots, sliced  - 15 oz. can white beans, drained and rinsed - 3/4 cup dairy free milk - 1/2 cup nutritional yeast - 1 tsp. garlic powder - 1-2 tsp salt - 1-2 tsp dried thyme


Remove cauliflower from stalk and cut into equal size pieces.


Add cauliflower florets and 2 cups vegetable broth to large pot. Cover pot and bring to boil.


While cauliflower is coming to a boil, chop the broccoli and carrots.


Once cauliflower is tender, blend it with an immersion blender until smooth.


Add broccoli, carrots, 2 cups vegetable broth, salt, garlic powder and dried thyme to mixture in pot, cook 7 minutes.


While broccoli and carrots cook, combine drained white beans with 1/2 cup dairy free milk and blend until smooth.


After 7 minutes, add white bean mixture, 1/4 cup dairy free milk, and nutritional yeast. Stir well.

Enjoy for lunch or dinner on a chilly day! Leftovers are great too, you can even freeze this soup for later.
