INGREDIENTS

1 cup quinoa, dry1.5 cups water (2 cups for stovetop)2 medium limes, juiced3/4 tsp salt1 tsp garlic powder1/3 cup cilantro, chopped

Step 1

Rinse the quinoa well. Add quinoa and 1.5 cups water to the instant pot or 2 cups of water to a pot.

Cook quinoa 1 minute high pressure, let naturally release 10 minutes. If cooking on the stove, bring quinoa to a boil then turn to low, cover and simmer 15 minutes.

Finely chop the cilantro.

Once quinoa is done cooking, add lime juice, chopped cilantro, salt and garlic powder. Stir well and serve immediately.
