The Best Carrot Pasta Sauce

– Olive oil – Onion – Garlic – Carrots – Vegetable broth – Coconut aminos – Tomato paste – Salt – Garlic powder – Dried thyme – Pasta

Step 1

Chop the onions, garlic and slice the carrots.


Step 2

Preheat a large skillet over medium high heat. Add chopped onions to the skillet and cook 2-3 minutes.


Step 3

When onions are softened, add the garlic and carrots. Cook for 8-10 minutes.


Step 4

When water has come to a boil, add the pasta and cook for 2 minutes less than the box indicates.


Step 5

When carrots are soft, add them to blender with vegetable broth, coconut aminos, tomato paste and spices. Blend until smooth.


Step 6

Right before the pasta is done cooking, remove about 1/2 cup of the liquid. Drain the pasta and add it back to the pot.


Step 7

Add carrot sauce to the cooked pasta and stir well.


Step 8

Add about 1/4 cup of the pasta water and stir well. Cook 2-3 minutes on low heat..
