INGREDIENTS

– Onion – Garlic – Bell peppers – Dried basil – Dried parsley – Salt – Garlic powder – Tomato paste – Vegetable broth – Diced tomatoes – Balsamic vinegar – Butter beans (or white beans) – Spinach

Step 1

Preheat a large pot over medium heat. Chop the onion, slice the garlic and chop the bell peppers.

Once the pot is hot, spray with olive oil and add the onions, cook 4-6 minutes then add garlic and cook 1 minute.

Add bell peppers and cook 3-4 minutes to soften.

Add tomato paste and spices and stir well. Cook 1 minute.

Add the rest of the ingredients except the spinach. Put over high heat and cover to bring to a boil.

Once boiling, turn off heat and blend 1/4 -1/2 of the stew with an immersion blender or regular blender.

Add spinach and stir until wilted. Serve hot.
