The Easiest Brown Rice and Lentil Soup

– Carrots – Celery – Onion – Brown lentils – Brown jasmine rice – Water – Vegetable broth – Spices: Salt, dried thyme, garlic powder, bay leaves – Frozen peas – Frozen spinach

Step 1

Chop the vegetables. Add them to a large pot and cook 5 minutes.


Step 2

Rinse the rice and lentils in a strainer.


Step 3

Add the rest of the ingredients except frozen peas and spinach to the pot.


Step 4

Turn the heat to high, bring to a boil. Once boiling, turn down to low and simmer covered 30 minutes.


Step 5

After 30 minutes, turn off heat and add frozen veggies. Stir and serve hot.


– Diced tomatoes + 1 tbsp. balsamic vinegar – Frozen, fresh or roasted bell peppers – Thinly sliced zucchini – Mushrooms (saute with other veggies) – Fresh parsley, dill
