The Best  Black Bean Broccoli Tacos

– Olive oil – Broccoli – Cumin, garlic powder,smoked paprkia, salt, red pepper flakes – Black beans – Tomato paste – Water – Tortillas Cilantro Lime Slaw – Cabbage – Lime – Olive oil – Cilantro – Salt, garlic powder, ground cumin

Step 1

Preheat a large skillet over medium heat. Chop the broccoli into bite size pieces.


Step 2

Once the skillet is hot, add olive oil and broccoli and cook on medium 3-4 minutes.


Step 3

Add 1-2 tablespoons of water, place a lid over the skillet and steam the broccoli.


Step 4

Add the 1/2 the spice mixture to the broccoli and stir well.


Step 5

Rinse and drain the black beans. Add black beans, tomato paste and the rest of the spices to the skillet. Cook 1-2 minutes, stir well until tomato paste has fully incorporated.


Step 6

Combine the lime juice, olive oil, salt, garlic powder and cumin to make the slaw dressing.


Step 7

Thinly slice the slaw. Add it to a bowl with the dressing and stir well.


Step 8

Microwave the tortillas with a damp paper towel for 20 seconds to make them pliable and easy to fill.


Step 9

Fill the tacos and enjoy!
