INGREDIENTS

– Dried apricots – Hot water – Olive oil – Red onion – Curry powder – Garlic powder – Salt – Lime juice – Chickpeas – Cilantro – Shredded carrots

Step 1

Soak the dried apricots in boiling water at least 5 minutes.

Preheat a skillet over medium heat. When hot add olive oil, chopped red onion and spices.

Cook the onion and spices for 3-4 minutes until onions start to soften. Turn off heat.
