– Potatoes – Vegetable broth – Cashews – Salt – Green onion

Step 1

Peel and chop the potatoes into 1 inch cubes. Add potatoes to pot and cover with vegetable broth (5 cups).


Step 2

Cover pot and bring to a boil, cooking about 20 minutes total until fork tender.


Step 3

While potatoes are cooking, pour boiling water over the cashews and let sit at least 5 minutes.


Step 4

Once potatoes are done, drain cashews and add 1/2 cup of the hot vegetable broth to them.


Step 5

Blend cashews and vegetable broth until smooth.


Step 6

Add cashew cream, salt and the rest of the vegetable broth to the potatoes and blend with immersion blender.
