INGREDIENTS

1 pound zucchini (cut into coins) 2 bell pepper (red, yellow or orange) 1/2 red onion 1 pound salmon 2 tbsp olive oil 2 tbsp red wine vinegar 2 tsp italian seasoning 1 tsp oregano 1 tsp garlic powder 1 tsp salts

Step 1

Chop the vegetables. Cut the zucchini into 1/2 inch thick coins. Chop the peppers and onions into bite size pieces.

Make the Greek marinade by combining the olive oil, red wine vinegar and seasonings in a bowl or cup.

Place salmon and veggies on sheetpan. Spoon the marinade over each.
