This week I’m going to share with you my favorite eats from the week. I’ve been cooking a bit more this week but also discovered a green smoothie combination I can’t get enough of!
Banana pancakes with peaches and homemade almond cinnamon butter. It was in the high 80s here this weekend so I figured I’d get my summer on 🙂
Pumpkin blueberry greek yogurt. I know it sounds weird but I leave the blueberries frozen and they are the perfect complement for the pumpkin! I don’t care for pumpkin right out of the can so I always heat it in the microwave for 30-60 seconds with pumpkin pie spice and cinnamon. Add this to cinnamon greek yogurt and do a little happy dance!
I’ve gotta share the thin mint smoothie recipe because it’s so good. I’ve had it for 7 days straight. Going to have to figure out how to make this into a thin mint oatmeal soon!
Thin Mint Green Smoothie
This smoothie is bursting with delicious chocolatey mint flavor! Super quick, super delicious, super healthy and super minty! Protein packed!
Combine all ingredients in blender and blitz until smooth. I've been adding almond butter to this mix as well if I just get back from a run or morning workout.
Epic Chipotle: Dave’s (double chicken) and mine (veggie and guac).
Roasted garlic tomato soup with roasted Italian seasoned chickpeas.
Spaghetti squash with my all time favorite tomato kale mushroom sauce. I can’t even begin to explain how good this is. I baked salmon in the oven with sun dried tomato pesto on top prefect combo!
I have to be honest here. We don’t normally have “dinner”. During the week we make huge productions out of yogurt and protein powder mixed with frozen fruit almond milk and whatever crunchy addition I can get my greedy carb loving hands on. This week it’s been puffins and granola. This one was homemade apple pumpkin butter, homemade granola with apple chips, greek yogurt, and blueberries.
We made it out on Saturday night to have dinner at Zoe’s Kitchen. I had this quinoa salad with salmon skewers it was delis. Saturday Dave and I did SPIN early and we’re just out and about.
I also made Homemade Apple Pumpkin Butter and added my pancakes, yogurt and on banana with almond butter. To make this I made a variation of my apple butter by adding a can of pumpkin, increased the water to 1 cup and add pumpkin pie spice and cloves. Super easy.
