I’ve been pretty MIA for the past few days. Between Sugar getting sick and work being so crazy, I’ve been lucky to get to bed before 2:30 most mornings for the past 2 weeks. It’s really starting to catch up with me. Have you ever noticed how not sleeping makes you a hungry beast? Ugh add stress to that not sleeping and you can pretty much guarantee I’m eating all day long. I have to admit I’ve always been a little jealous of the people that don’t stress eat. Tell me your secrets!
I’m happy to say that my Sugar Bear is looking much better, she even went for one of our mini walks the other day! My work deadline is today so that is coming to a close as well! So I’m really looking forward to getting back into a normal routine. Pepper is ready for me to start cooking soon. She has started begging Dave in the kitchen while I’m at the table working!
With all of my working Dave’s been able to catch up on some TV he’s been missing. He’s been raving about The Walking Dead season premier all week. I don’t know what all the hype is about, I don’t watch it?
I’ve noticed that when I’m tired and under stress all I want is sweets and carbs. I’ve been pretty much living off of coffee and homemade cookies and chocolates for the past few days. I even broke down and got a few ThinkThin bars because I knew I’d be rolling out of the house tired in the mornings and would likely be looking for something sweet come 3pm.
I haven’t been able to make it to the gym at lunch either and I miss it so much! It’s such a treat to be able to leave my desk in the middle of the day and move around. I think it’s what keeps me from mindless eating most afternoons. With that being said, my pictures today are few and far between. I did make some sweet potato black bean burgers which turned out amazing, but don’t photograph too well – smile! I think it’s the spinach I added, a very green undertone.
Breakfast was a quick greens smoothie with some Skoop A-Game while I was driving to work. Since I was up until 3AM I wanted something quick.
Around noon I downed some yogurt with pumpkin butter, peanut butter, raspberries, and apples. I was rushing to get out the door this morning and I just kind of threw all my leftovers in a bag this morning. I made a batch of apple cinnamon overnight oats for breakfast Monday and had the leftover apples in the fridge for today. They made this yogurt heavenly with their cinnamon goodness.
For a snack I had a scoop of almond butter and handful of raspberries
Lunch time was a Black Bean Burger with TexMex Veggies. I seasoned grilled zucchini and summer squash with chili powder, cumin, corriander and cayenne pepper. I added that to a salad with butternut squash, homemade guacamole, store bought salsa and roasted beets. I love the sweetness the beets and the butternut squash add to the otherwise smokey, spicy dish. The black bean burger had protein powder, black beans, chili powder, grilled onions, cumin, cilantro, butternut squash, spinach and salt and pepper in it. Like I said before, they don’t photograph well.
My lunch didn’t seem to fill me up so I snacked on a few homemade cookies and a little peanut butter. I also made an iced coffee though an eggnog latte would have been so much better!
Since it’s deadline day tomorrow we worked pretty late tonight but I was still able to get in a decent workout. I have to admit though, as soon as I got home I grabbed a handful of slightly salted almonds and more homemade chocolates than is pictured here. Those almonds are so addicting.
No dinner, just a huge bowl of Fage yogurt with protein powder, fruit, and puffins. YUM!
