I have a confession! I can’t go more than a day or two without chocolate! Please tell me I’m not alone in this obsession! And brownies are my favorite way to indulge in this chocolate obsession! But I know myself well enough that I can’t make a batch of brownies without having somewhere to take them to. Otherwise, I find myself in the kitchen with every excuse, eating brownies until the pan is gone and my stomach hurts.

So instead of trying to white knuckle my way out of my brownie obsession, I make single serve brownies like these chocolate mint brownies or single serve peanut butter brownies (which I highly recommend you try as well).  These chocolate mint brownies would be delicious at any time of the year, but especially in winter when you want to get all cozy on the couch with a hot chocolate and a brownie watching Christmas movies and reminiscing about being a kid.

What makes this brownie high in protein?

Also what makes this recipe high in protein is the vegan protein powder I use! I love to use Nuzest pea protein. Whey protein dries out during baking and does not absorb water like vegan protein so it will not work in this recipe, so don’t try to substitute it.

All you need to make this recipe is your microwave. Simply mix the ingredients, divide them between two ramekins and pop them in the microwave for 2 minutes! I like to top mine with SoDelicious Brand Coco Whip when I really want to indulge! Chocolate chips on top are optional, but I highly recommend just a few! And the best news is that you can either share this recipe with a loved one, save it for tomorrow or make this recipe in one big ramekin and enjoy it all in one sitting!

Instructions

  • In a mixing bowl, combine the non-dairy milk and applesauce. Add the ground flax and stir well.
  • Add the remaining ingredients and stir well making sure everything is fully combined
  • Divide between two ramekins (or one large ramekin) and microwave for 2 minutes
  • Let cool slightly. Serve warm or cold

The greens powder contains wheat grass, among other ingredients, that makes it NOT gluten-free.

Hi Monika! Wheat grass does not contain the gluten protein. We have a celiac in our house so are very careful about these things.
