Peach Overnight Oats with Yogurt

Creamy oats with fresh ripe peaches for a perfect quick breakfast on the go. These oats require no cooking and are so simple!

  • Easy to modify/adapt to what you have on hand! You can use frozen or fresh peaches, your favorite kind of yogurt or omit the yogurt completely depending on the kind of breakfast you are craving.

Ingredients

  • Rolled oats – also called “old fashioned oats” these have the best texture when soaking overnight. You could also use quick cooking oats but will get a slightly different texture.
  • Chia seeds – chia seeds help to thicken the oats and also provide lots of added fiber.
  • Dairy free milk or water – this is what the oats soak in overnight. I prefer dairy free milk for this to help with that creamy texture.
  • Plain yogurt – can be dairy free or regular. I prefer to use a Greek style yogurt for added protein.
  • Maple syrup or honey – this is to sweetened the oatmeal! You could also use a low calorie sweetener here as well.
  • Peaches – fresh or frozen. You can leave the skin on the peach or remove it before slicing it.

How to make peach overnight oats

  1. Start by adding the oats and chia seeds to a large jar or bowl. This recipe makes 2 servings at once.
  2. Pour the dairy free milk over the oats/chia seeds and stir well, ensuring all the dry ingredients are now wet.
  3. Add the Greek yogurt and maple syrup/honey. Mix again until everything is well combined.
  4. Store in the fridge overnight.
  5. The morning of, divide the oats into 2 containers and top with chopped peaches. Add extra dairy free milk if needed. Serve with your favorite toppings.

Top tips

  • Old fashion or rolled oats are best. You can also use instant or quick oats but you may find that the texture is a bit different. I do not recommend using steel cut oats as they do not get the same texture.
  • Stir as you go so that things are evenly mixed and you don’t have dry oats at the bottom or a clump of chia seeds.
  • If you are using a sweetened yogurt, you may not need to add any honey or maple syrup.
  • Chia seeds are used to thicken up the soaking liquid. If you don’t like chia seeds because they get stuck in your teeth, you can grind them in your high speed blender (I do this anytime I make chia pudding).
  • If oats seem dry in the morning add a few tablespoons of milk or water and stir well.

  • Nuts and seeds: Pecans, cashews, almonds, pistachios, pumpkin seeds

Common questions

What are overnight oats?

Overnight oats are oats that get soaked in milk or water overnight instead of cooking them on the stove or in the microwave. As the oats soak, they absorb the liquid and soften. Often adding chia seeds or yogurt will help to make the oats even creamier.

How long do overnight oats have to soak?

Typically 6-8 hours is ideal.

I have made overnight oats in just 2 hours or so using hot water (not boiling hot). Simply add hot water and stir stir stir. This will create that oatmeal texture quickly, and once you add the yogurt, it will be creamy and dreamy no problem. Be sure to allow the oats to still sit in the fridge for 2 hours for the chia seeds to soak up extra liquid and the oats to soften more.

Can you eat overnight oats hot?

Yes, however I think for this recipe specifically it would be best to eat them cold because of the yogurt.

Can you use frozen peaches?

  • Yes! I typically use frozen peaches when I make this recipe because peaches have such a short season. When peaches are fresh though, they really are best!
  • Frozen peaches can often not be as sweet as fresh, ripe peaches, which is why I suggest you add some maple syrup or honey to these overnight oats.
  • Also you should pull your frozen peaches out of the freezer the night before so they can defrost in the fridge overnight. Then you can simply just chop them and add them right to the oats in the morning.
  • You could also use canned or jarred peaches, however you will want to check the ingredients, as they can sometimes be full of added sugar or unwanted ingredients.

 Other fruit you could use

  • Necarines
  • Cherries (pitted)
  • Plums
  • Berries – strawberries, blackberries, blueberries, raspberries
  • Bananas

How long can you store overnight oats?

Overnight oats are great for up to 3 days in the fridge. Some people say you could go up to 5 days, but the texture gets really mushy after 3 days storage.

Be sure to store the oats in the fridge in a well sealed container. This is why I love to use mason jars.

Also I prefer to add the fruit the day of, so that you don’t have to worry about it going bad if you do let it sit in the fridge a few days at a time.

Substitutions

  • Rolled oats – you could also use quick cooking oats or even quinoa (cooked). The texture with quinoa would change a bit and you may need less milk but it would be equally as delicious and satisfying.
  • Chia seeds – these really help to make the overnight oats thick and creamy. If you don’t love chia seeds, you can just omit them and use slightly less milk.
  • Dairy free milk – you could also use water, but I prefer the texture from the dairy free milk. If dairy is not an issue, you could use regular milk as well.
  • Greek yogurt – I love Kite Hill Greek Style yogurt – it’s got lots of protein and is plant based. You could also use a good coconut yogurt (not high in protein). If you can tolerate dairy, use your favorite Greek style yogurt. You could also omit the yogurt and instead add vegan protein powder to add protein and that same creamy texture.
  • Maple syrup or honey – I love natural sweeteners but you can use whatever sweetener you love. I don’t recommend a sugar since it may not dissolve all the way.
  • Peaches – fresh, frozen, canned, jarred. Test your peaches to see how sweet they are. You may need to add more honey or maple syrup if they aren’t very sweet. See the list above for other fruits you could use in place of peaches.

  • In a large mason jar, combine the rolled oats, chia seeds, dairy free milk, plain yogurt and optional collagen peptides. Stir well.
  • Defrost the peaches and chop them up.
  • Add the maple syrup (or honey) and peaches to the top of the oatmeal mixture. Place the jar in the fridge overnight (at least 3 hours). 
  • The morning of, stir well and add additional 1/4-1/2 cup of liquid as needed. 
  • Divide into 2 smaller jars (for easier eating) and top with your favorite topping!

Notes
