So let’s check my list of “Things I want to do this Fall” and of course that list includes my favorite Pumpkin Kitchen Sink Cookies!

Well I have officially checked a few of these items off my list. I have pumpkins and mums adorning my front door and I even bought Dave a few to decorate at his house. Yesterday, we went to the corn maze. Oh and these Pumpkin Kitchen Sink Cookies are pretty much everything good about pumpkin and apples combined. Add that to the Apple Pumpkin Protein Muffins I made a few weeks ago and tonight I made Pumpkin Pasta Sauce. Pretty proud of my list. I’ve been training for my half marathon so definitely enjoying the nice weather – perfect time of year for half marathon training!
Now just to work on that closet!… Procrastination at it’s finest. Maybe soon maybe not. I’m hoping to get to the mountains before all the leaves fall off. If anyone is in NC and knows a good weekend to go so I don’t miss the leaves, please let me know.
The Amazing Maize Maze
So the Corn Maze – it was awesome. There was no seeing over or through it. I’ve never done a maze before, and I was not disappointed. It was so interesting how many people my age were there – sans children. We went late in the day, after getting some stuff done around the house and grabbing a bite to eat at Zoe’s Kitchen. The maze was a baseball player design and was color coded which helped visualize where you were in the maze and if you’ve already been there or not. The map of the maze was cut into 12 sections, each square piece was in a mailbox hidden somewhere in that section. To finish your map, you had to find all 12 pieces and find your way out. Dave has been so excited about the maze, I let him take the lead and we had a blast. I thought that since everything was just corn, it would be difficult to remember if you’ve been to an area yet or not, but there were points of interest along the way that really helped. We found our way out in about an hour and 20 minutes, not too bad considering we kept a pretty leisurely pace the entire time.
Pumpkin Kitchen Sink Cookies
These Pumpkin Kitchen Sink Cookies are already getting requests from Dave for a second batch. I’m really glad I stocked up on organic pumpkin puree earlier this month! The cookies are reminiscent of kitchen sink cookies, in that you just dump everything you love in the bowl and mix and scoop. I picked up some dark sweet cherries at Trader Joe’s earlier this week. I love these because they don’t have any added sugar which is usually why I don’t buy dried fruit outside of dates and raisins. But these were naturally sweet and added a great contrast to the pistachios and pumpkin. Dried cranberries sweetened with Juice or organic cane sugar would also be a good option in these.
These cookies have a long list of ingredients, but most of them are spices or the add in ingredients, so please don’t be deterred!
Kitchen Sink Cookies
Cowboy Cookies, Kitchen Sink Cookies, Everything Cookies. Whatever you call them. These fall cookies will be a new favorite in your house!
- 1 cup pumpkin puree
- 1 tbs. chia seeds
- 2 scoop vanilla protein powder
- 1 scoop pea protein
- 3 tbs. coconut flour
- 1 cup rolled oats
- 1 tsp. vanilla extract
- 2 tsp. pumpkin spice
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/3 tsp. ground clove
- 1/4 tsp grated fresh ginger
- 3 small apples peeled and grated (coarse grate)
- 1/2 cup chai tea
- 3 tbs. maple or maple agave blend
- 1 1/2 tsp stevia
- 4 egg whites
- 1/4 cup pumpkin pie spiced pumpkin seeds
- 1/4 cup pistachios
- 1/4 cup raisins
- 1/4 cup dark sweet cherries
- Preheat oven to 350. Steep one chai tea in 1/2 cup hot water (or make an entire tea and drink the rest).
- In a large bowl, mix together the pumpkin and chia seeds. Let sit while you peel the apples.
- To the pumpkin, chia mixture, add the vanilla protein powder, pea protein, coconut flour, maple syrup, pumpkin pie spice, cinnamon, nutmeg, cloves, ginger and stevia. Add the chai tea and egg whites and mix until combined.
- Add the oats and grated apple and thoroughly incorporate.
- Mix in whatever flavors you like here, I used the pistachios, pumpkin spiced pumpkin seeds, dried dark sweet cherries and raisins. Once everything has been mixed, scoop out on a baking pan lined with parchment paper.
- Using a tablespoon scoop or just a large spoon, make equally sized cookies and distribute on the baking pan, leaving a bit of room between each cookie. I was able to get 34 cookies out of this mixture on 3 baking sheets.
- Bake for 10-15 minutes at 350. To test cookies, press lightly. The cookies will have just a little give left when they are ready. If they still feel mushy under the hard exterior, bake an additional 3-5 minutes.
My first batch took longer than the second and third batches. I’m not sure if this is because the oats had more time to absorb the liquid in the batter or what but just a heads up.
