Start your day with this healthy microwave English muffin. This easy recipe is a healthy version of the classic English muffin; they are vegan, gluten-free, low-fat, and did I mention this microwave English muffin is ready in about three minutes?
How do you like to start the day? What about an afternoon snack? One of my favorite ways to start the day is with peanut butter and jelly on a toasted English muffin. I also have vivid memories of being a kid and making my own English muffin pizza. You know what I’m talking about, a little tomato sauce and just a sprinkle of cheese melted on top. All toasted up in the oven. I’m going to be totally honest with you guys, I still make those English muffin pizzas.
One of the things I love best about a recipe that you can make at home is that you get to add whatever you’d like to the dough. One batch I made was cinnamon and dried blueberries, another batch was just plain cinnamon, I’ve made them plain, an “everything English muffin” too! I can customize these based on whatever I’m craving that day. Try getting that from the store.

Really my focus is to make easy, wholesome recipes. So many times I hear people say healthy is too hard, and they just need something convenient and don’t have time to cook a healthy meal. But I refuse to believe that healthy is hard, it just takes some creativity and some faith in yourself. This recipe is really simple. It’s a microwave recipe, it doesn’t require much preparation, you only need a bowl and a microwave. The hardest part is choosing what flavor do you want today.
Microwave English Muffin Recipe Tips
The base of this recipe includes pea protein. New to protein powder? Pea protein is great! You can use it in recipes like this, cakes, muffins, cookies and of course one of my favorite ways, protein pancakes. I’ve also used it as a way to add some extra protein to sweet potato tots. Buying an unflavored protein powder is great, you can also use it in smoothies, all you have to do is add a bit of Stevia and some vanilla extract or cocoa powder and you instantly have vanilla or chocolate protein powder. It’s super versatile and relatively inexpensive compared to other protein powders.
If you don’t have any pea protein, you’re still in luck! I’ve included two versions of this recipe for the price of one today :) You can also make this without protein powder, just know that you’re missing out on some great nutritional benefits of protein! These benefits include helping you feel full longer and help your body build and repair muscles. Starting your day with protein has been thought to help regulate hunger all day. Hello healthy protein packed microwave English muffin! Add and egg white or peanut butter on top and you are on the way to a healthy day!
Healthy Microwave English Muffins
Ingredients
Protein Recipe
- 1/2 tbs. ground flax
- 3 tbs. hot water
- 1/2 tbs. tapioca flour
- 1 tbs. brown rice flour - or flour of choice
- 1 tbs. protein powder
- 1/2 tsp coconut oil
- 1/2 tsp. baking powder
- small pinch salt
- 1 tbs. hemp hearts - optional
English Muffin without protein
- 1/2 tbs. ground flax
- 3 tbs. hot water
- 1/2 tbs. tapioca flour
- 2 tbs. brown rice flour
- 1/2 tbs. coconut flour
- 1/2 tsp coconut oil
- 1/2 tsp. baking powder
- small pinch salt
Instructions
- For both versions:
- In a small bowl combine all ingredients, stir well.
- Spray a large ramekin well with coconut oil or non stick spray of choice.
- Add batter to ramekin and microwave on high for 2 minutes.
- Remove from microwave (will be hot) and turn upside down to release the muffin. Allow to cool for 1 minute before trying to cut in half.
- I prefer these toasted, so for maximum yumminess, be sure to toast before enjoying!
