Are you new to gluten free baking? Wondering what you should stock your pantry with to be successful? While I can’t claim to be an expert, I’ve been learning over the past year and wanted to share with you my kitchen essentials before holiday baking started. Although we are not all gluten free, I think it’s important to have at least one or two gluten free desserts in your back pocket. After all, the last thing you want is to let your guests feel left out because they have a gluten allergy or intolerance.
This is the first year of holidays where we will be eating all gluten free items. Dave found out about 4 months ago that he has an allergy to gluten, which we weren’t surprised to find out after seeing how he would react to foods with gluten. I highly encourage people to go get tested for allergies, it’s amazing what you can find out about your body. Having constant bloating and discomfort in your stomach is not normal, please have this checked out if you normally deal with these symptoms.
Ok back to baking. So when I first started gluten free baking, it was really just trial and error. Coconut flour does not act like regular flour, nor does almond flour. I’ve discovered that gluten free baking is much more involved than creaming the butter and sugar and adding in a cup or two of flour and baking powder. Often it’s necessary to combine flours to get the texture you are looking for. I’ve also found that adding arrowroot flour or tapiocia flour is necessary to get that cookie texture in more delicate recipes. Don’t let this discourage you though, once you have the ingredients and a basic understanding, it’s not that tough!
So first I want to go over some of my gluten free baking essentials. I wanted to stock up before I started my holiday baking, and was lucky enough to work with Swanson Health Products to stock my pantry full for under $100. What else would I recommend? These are things I already had on hand and didn’t need more of:
- Gluten free baking powder (we found that Dave was reacting to normal baking powder)
- Gluten free oats
- Gluten free oat flour
- Unsweetened cocoa powder
- Coconut sugar
- Ground flax seeds (store these in the freezer)
- Chocolate chips/white chocolate chips or bars
- Walnuts, almonds, pistachios, pecans, hazelnuts
While this isn’t an exhaustive list, it will certainly get you on the way to making epic gluten free desserts! I can’t wait to make a pumpkin cheesecake with those gluten free graham crumbs and my favorite sugar cookies with the brown rice flour and tapioca flour, oh and the MRM vanilla protein powder of course!
Speaking of protein powder, you may have noticed that I love to bake with protein powder. I replace the flour in a traditional recipe with a combination of protein powder and coconut flour and one or two of the flours listed above. This way I’m getting a protein and fiber filled dessert that I can happily eat and still feel fantastic! Most of my recipes are healthy enough you could even eat them for breakfast!
