This is my first WIAW and I’m excited to recap my meals! This time around, I’m going to recap my Labor Day eats.
The highlight of course was getting to have pancakes for a third day in a row. You’d think I’d be tired of them but nope :). I made my protein pancakes and they were AH-MAZNIG. I topped these babies with peanut butter, blueberry chia jelly, and homemade granola.
I’m pretty much addicted to that stuff! After a quick stroll around the neighborhood with the girls, Dave and I headed to the gym; chest and tricep day! Let me say I’m so glad I ate as much as I did, because I exhausted my arms and left the gym seriously proud of my workout. I benched 105 lbs! – I’ve never attempted anything over 100 lbs.
As soon as I got back from the gym I needed food and lots of it! Luckily I had done my Sunday night meal prep and had some awesome food ready to throw together. I made grilled veggies (zucchini, squash, red and orange peppers), roasted corn and black bean salsa (corn, black beans, lime juice and tomato with some cumin and cayenne pepper), lentils spiced with cumin and coriander and sweet potato rounds. I put all this over spinach and added a veggie burger and 1/4 of an avocado. Topped with store bought salsa and viola.
Before I continue… These sweet potatoes need some love. They are seriously the only way I will make sweet potatoes anymore. Making them wedges to mimic fries always ends up with super crispy ends (what i mean is mostly burnt!) and mediocre sometimes hard center.
Cutting the sweet potato into 1/2 inch rounds and roasting on 425 for 20-25 minutes creates these little golden nuggets that seriously are amazing. Try it… You will never go back to “wedges” again. Tip: spray the pan and the top of the rounds with cooking spray and you won’t have to flip these). These are crispy on the outside and creamy deliciousness on the inside. yum. I might have eaten my weight in these. Just saying.
After chowing down, we went directly to the pool – I was sporting my food baby belly. We lounged for a bit with my good friend who drove over for some relaxing time before the sun disappeared! I snacked on almonds and more granola.
Dinner was this pumpkin parfait and more watermelon than I’d like to admit eating. I drank a protein shake before bed as I was busy with work and didn’t have time to cook.
