My Sunday night meal prep is filled with awesome food ready to throw together. I usually make grilled veggies (zucchini, squash, red and orange peppers), roasted corn and black bean salsa (corn, black beans, lime juice and tomato with some cumin and cayenne pepper), lentils spiced with cumin and coriander and sweet potato rounds. I put all this over spinach and added a veggie burger and 1/4 of an avocado. Topped with store bought salsa and viola.

The secret is to slice them into sweet potato rounds. They are seriously the only way I will make sweet potatoes anymore. Making them wedges to mimic fries always ends up with super crispy ends (what i mean is mostly burnt!) and mediocre sometimes hard center.
Sweet Potato Rounds
It is this simple. Simply cut the sweet potato into 1/2 inch rounds and roasting on 425 for 20-25 minutes creates. That will create these little golden sweet potato rounds that seriously are amazing. Try it… You will never go back to “wedges” again!
Sweet Potato Rounds Tip: Spray the pan and the top of the rounds with cooking spray and you won’t have to flip these). These are crispy on the outside and creamy deliciousness on the inside. I might have eaten my weight in these. Just saying.
