If you frequent this blog often then you already know about my love for protein pancakes. Actually just the name alone should give you a good idea of the obsession with pancakes here at PancakeWarriors!
My fitness journey started quite some time ago and I have grown and changed along the way. During the beginning of my journey, I was very convinced that I had to cut out all fat, and I was eating pretty much all carbs. During this stage, I was eating pancakes with my mom every Saturday morning, and eating frozen dinners and lots of prepared food from restaurants. I wasn’t really concerned with what food was doing for me, I was just avoiding fat so I wouldn’t be fat anymore. HA!
Then I heard that carbs were bad. So I gave up my pancake ritual with my mom. Pancake soon became only for special occasions, since I had deemed them to be off-limits with my new fad “no carbs” diet.
Luckily it’s been quite a few years since that happened and my new motto with life is to not avoid foods, but to find healthier ways to enjoy them. I don’t limit this just pancakes or sweets, I’m talking about everything. This includes pizza, quesadillas, philly cheesesteak, you name it! I probably have a healthy version for it. And honestly there’s a reason for that.
The food I eat is fuel for my body. Eating empty calories is not fuel. I want my food to help me build muscle, to help me recover from a workout, help me get my recommended vitamins and minerals for the day. Unfortunately, basic pancakes of white flour, white sugar, and milk is really not going to help me meet these goals. But you know what will, protein! It will help me recover from a workout, it will help me build muscle, and keep me satiated (feeling full).
This is why I love protein pancakes. These babies fill you up, they help keep you full, and they are delicious. The About Time protein pancake mix is literally the same idea as box pancake mix. You just measure out the dry ingredients; you add water, mix and pour. Viola!
I was joking with Dave that these were the pancakes he could make me if he ever decided to make breakfast in bed for me. They just that easy! Simple and tasty on their own, I didn’t even need syrup.
I received the cinnamon flavor from About Time and after making two or three batches of regular pancakes, I did something I have always wanted to do y’all. I made pancakes from slices of Apple. I’ve seen this done so many times on Pinterest and I have to be honest with you, the pancake recipe that I make every weekend is too thick. The About Time mix is perfect, you just have to add a couple tablespoons of water to the pancake mix, dunk the thinly cut apples into the mix, and throw them on the griddle. The result is extremely delicious – hello apples and cinnamon, but also they were so easy and it was such a treat!

- 1 large apple peeled and thinly sliced
- 1 cup of About Time Pancake Mix
- ½ cup cold water + 3 tbps of water
- Turn on griddle to 325 or medium heat on stove
- Slice apples thin
- combine pancake mix and water in large bowl. Stir until combined
- Spray griddle with non-stick cooking spray
- Dunk apple into pancake batter and place on griddle. This will be a thin layer of batter on the apple.
- Cook apple pancake for 2 minutes, flip and cook an additional 2 minutes.
